I tried a dozen muffin recipes over the past year to try and find one that was both Fix and Kids-approved and I finally found THE ONE! I make a batch of these 21-Day Fix Banana Chocolate Chip Muffins every week and the kids devour them for breakfast and they even ask for these for dessert. This makes me happy because I know they are all natural and healthy for them.
Let’s take a minute to talk about chocolate chips which, of course, play a huge part in the fact that kids go crazy over them! These are LOADED with Chocolate chips! Hundreds of chocolate chips… or are they? Here is the secret: Use minis! A few mini chocolate chips go a long long way! They get in just about every bite even though there is only 1/3 cup in the entire recipe. It will feel like a cheat.
I use Oat flour in this recipe which is very simple to make. Simply put your quick cooking oats into the food processor and pulse until you get a fine powdery texture. I also used a six grain flour this time along with the oat flour, but you can use whole wheat flour or whatever you have on hand if you prefer, it will work just fine. However I have tried using 1/2 cup of almond flour in this recipe and I would not recommend it. The texture was off and the kids did not enjoy them as much. It also meant that I had to allocate a fraction of a blue container which, let’s be honest, we’d rather keep for hummus or cheese.
Although they do not make the prettiest shaped muffins, I prefer using silicone baking cups when I make these. I find that the paper liners always stick to the muffins and rip when I remove them, and I also like that I don’t have to add extra oil or fat by spraying oil onto my muffin tins before baking. It also makes cleanup a breeze.
I hope you enjoy these banana chocolate chip muffins as much as we do!
