Yes you can!!! You can also have them for lunch and dinner too, no one’s judging!
Who doesn’t love a fresh batch of pancakes for breakfast on a lazy Sunday morning? These 21-Day Fix pancakes will hit the spot! You will feel as though you are having a cheat meal, but don’t worry, these are completely approved! In my household, they are also Kid-approved, so go ahead and double up the recipe!
Be sure to blend very well to break down the oats so that you don’t end up with a lumpy batter! Otherwise the oats tend to sink to the bottom or the blender and your pancakes will be inconsistent. You can also use Oat flour if you have it, but quick cooking oats work just fine.
These are quick, easy and so perfect! I like to switch things up a bit and use pumpkin pie spice instead of cinnamon. If you serve them with fresh fruit, don’t forget to count the extra purple container. Why not toss some chopped pecans or almonds on top for a crunch (don’t forget to count the Blue container if you do).
21-Day Fix Pancakes
Ingredients (1 serving)
- 1/4 cup quick cooking oats
- 1/2 medium banana
- 2 eggs
- 1/2 tsp vanilla extract
- pinch of cinnamon
- Splash of almond milk (optional)
Place all of the ingredients into a blender and blend until smooth. If the batter appears too thick, add a splash of almond milk and blend until desired consistency.
Pour half of the batter into a hot non-stick frying pan and cook approximately 2 minutes per side. Repeat with the rest of the batter. Serve with a drizzle of honey or pure maple syrup.
